Should my shop use WebP or JPG?
On your own shop's pages, WebP: it generally makes smaller files than JPG, and Chrome, Edge, Firefox, Opera and Safari all show it. For marketplace uploads, check the table: several accept JPG but not WebP, so keep a JPG for those.
